The preset setting is a little counter-intuitive. Here's how to do it:

First click Preset -> New

Create the sound, then click Preset -> Rename

Click File -> Save Bank As and choose a filename other than the default

Recall presets later with File -> Open Bank and select the bank filename 
you chose

Basically, if you don't click the Save Changes button (saves to the 
current bank) or do a Save Bank As, you'll lose the presets you created 
when the application closes. (There is a warning dialogue box about 
this, but it's a bit confusing if you've already renamed some presets, 
because you'd expect these changes to stick).

It would be handy if you could type straight into the preset name box, 
instead of having to use Preset -> Rename. I've posted a bug report in 
the amsynth forum about that.

I've just looked at my ~/.amSynth.presets file and there are dozens of 
instances of 'New Preset' listed after 'Artic', none of which show up in 
amsynth. So those new presets aren't being read back in - probably 
because they don't have a unique name. I renamed a few of these 
instances with random names, then they showed up in the presets menu 
when I loaded the bank.
